Quesadillas are a traditional Mexican dish – but really – they are just a fancy word for Jaffles but using flatbread or tortillas instead of bread slices. You can use any sort of flatbread in this recipe – and we also utilise leftover barbecue chicken – so this is a perfect ‘Monday night’ meal.

A quick and easy recipe to use up leftover chicken – creamy, cheesy, and delicious.

Ingredients

  • 4 Tortillas Or Similar

  • Leftover Barbecue Chicken (whatever You Have On Hand)

  • 1 cup Grated Cheese

  • 2 tbsp Sour Cream

  • 1/2 Spanish Onion, Diced Finely

  • 1/2 Red Capsicum (diced Finely)

Directions

  • Dice all of the leftover roast chicken and place it in bowl with the rest of the ingredients.
  • Mix well.
  • Spread the mixture evenly over half of the tortillas.
  • Place another tortilla on top and place in a sandwich press for 5 minutes or until golden.
  • Cut into four slices and enjoy piping hot.
