Slow Cooker Lasagna… Yes, you heard that right!

Even the most traditional lasagna lovers will be amazed at how beautifully this classic dish turns out in a slow cooker.

It’s rich, saucy, cheesy, and every bite is pure comfort. No need to pre-cook the pasta sheets or fuss over layers for hours — just layer it all into your slow cooker, set it, and let it work its magic.

We know how much you love lasagna — and this one’s a total game-changer. Perfect for busy families, lazy weekends, or anyone who loves the idea of a low-effort, high-reward dinner. The recipe generously serves eight, but if you’re a family of four and not keen on leftovers (though we think you’ll want them), feel free to halve the recipe.

Warm, filling, and fuss-free, this Slow Cooker Lasagna will become a regular in your meal rotation. Come on, make some and dig in!

Ingredients

  • 500 gram Beef mince

  • 1 Brown Onion-Diced

  • 1 tbsp Crushed Garlic

  • 2 tbsp Tomato Paste

  • 1 tbsp White Sugar

  • 1 tsp Pepper

  • 1 tsp Oregano

  • 1 Diced Tomatoes (tin)

  • 1 tsp Basil (dried)

  • 250 g number Lasagne Noodles

  • Cheese Sauce
  • 1 tbsp butter

  • 2 cup milk

  • 1 tbsp Plain Flour

  • 1/2 cup cheddar cheese-Grated

  • 1 tsp Salt

  • 1 Chicken Stock Cube (crumbled)

Directions

  • Place your slowcooker on the low setting and spray it well with canola spray.
  • In a bowl mix together all the first part of the ingredients except for the lasagna sheets.
  • Mix well.
  • Cover the bottom of the slowcooker with the mince mixture, then place the lasagna sheets over the top (without overlapping – you might have to break them a bit to fit).
  • Next spoon enough cheese sauce over the noodles to cover (not too thick), and repeat until all the mixtures are used up.
  • Sprinkle some extra cheese on top.
  • Cook on low for 6 hours or high for 4 hours.
  • Use a large serving spoon to ‘scoop’ out the lasagna to serve.
  • Serve with a salad and crusty bread.
  • In a microwave proof container place the butter and the flour, microwave for 30 seconds or until the mixture is foamy, whisk in the milk, cheese and stock cube, and season to taste.
  • Microwave in 30 second increments until mixture is smooth and consistent and slightly thickened.

Do u have to cook the mince 1st, will it be lumpy??

    1. Nicole Avatar

It’s entirely up to you whether you cook the mince first or not Nat! It won’t be lumpy as it will breakup as it cooks 🙂

So you are not layering the lasagne with the meat and cheese sauces? I might try layering it. 😀

    1. Nicole Avatar

      Yes you can layer them!

If you were to make a Larger Lasagna by doubling amount of ingredients, would you need to increase cooking time?

Hi Danielle, you shouldn’t have to in this instance, just make sure it stays moist and keep an eye on it. Any longer and it might go gluggy.

Can you use penne pasta instead of lasagne sheets?

If its as good as the pizza pull apart I’m going to give it a go. We are having the pull apart for lunch today my 4 and 2 year olds loved helping crumble the butter and making the pizza – and watching it cook through the glass top on the slow cooker!!! Thanks sahm

Would it work without the Cheese Sauce? DF option.

    1. Jody Allen Avatar

Of course Skye, maybe substitute for a different sauce so you still have a lasagna like finish.

Made this tonight, it was different to normal lasagna that I am used to think it was cos the mince was so soft, I’d probably try again but with cooking mince a bit first

Hi, I was wondering what size tin of Tomatoes this should be?

Just curious what difference the high or low settings make to the consistency in this recipe? Thanks!

I’m currently doing the cheese sauce but it’s not getting thick – how long should this take
    Any other tips

    1. Stay at Home Mum Avatar

It might take a few goes Celeste! The trick is to not let it get too thick because that will make it difficult to spread over the meat!
