Barbecued Pineapple with Hot Buttered Rum Sauce
I love really simple recipes… and nothing scream ‘Hot Weather’ like fresh pineapple. This is a great dessert to make on the barbecue, but if you don’t have one – just cook the pineapple pieces quickly in a really really hot frypan with a little bit of coconut oil.
So deliciously simple!
Barbecued Pineapple with Hot Buttered Rum Sauce

Ingredients
1 number Fresh pineapple
125 gram Butter
1/2 cups Brown sugar
1/3 cups Bundaberg Rum
Directions
- Cut the skin off the pineapple, and cut it into long lengths.
- Cook the pineapple on the barbecue over flames until the pieces start to caramelize and have blackened marks (but don’t overcook)
- To Make the Buttered Rum Sauce:
- Heat a frypan or small saucepan.
- Melt the butter, add the brown sugar and rum.
- Boil, stirring constantly until the mixture thickens and caramelizes (about 6 – 8 minutes)
- Serve the barbecued pineapple pieces with the rum sauce.
