We love homemade mayonnaise, particularly when it’s this Super Creamy Mayonnaise. Not only does this mayonnaise have a fantastic flavour and texture, it also ends up being much better for you than store-bought mayonnaise. Homemade mayo that’s unbelievably creamy—smooth, rich, and perfect for sauces or sandwiches.

Ingredients

  • 3 Egg yolk

  • 1 tbsp White vinegar

  • 1 tsp Salt

  • 0.25 tsp White pepper

  • 1 cup Olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp Lemon juice

Directions

  • In a food processor, or using a container and stick blender process the egg yolks, vinegar, salt and pepper until well combined.
  • Keep the processor on, and gradually add the olive oil in a steady even stream until mixture is thick and creamy.
  • Then, add the mustard and lemon juice and mix until just combined. This recipe should yield about 1.5 cups.
