Gingerbread Muffins

Ingredients
1 cup Water-boiled
1 tsp Bicarb soda
.5 cup Vegetable oil
2 Eggs
.75 cup Brown sugar
2 cups Plain flour
1.5 tbsp Ground ginger
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Baking powder
.25 tsp Salt
0.33 cup Golden Syrup
Directions
- Preheat an oven to 180 degrees and line 10 of a 12-hole muffin tin with paper cases.
- Pour boiling water into a bowl. Add the syrup and bicarb, mixing well. Allow to cool.
- To this bowl add the oil and the eggs. Mix until combined. Then add the sugar and mix.
- Sift the rest of the ingredients into the bowl, and stir until combined.
- Divide evenly in the muffin pan. Depending on how big your pan is, you may make 12 or 18. Bake for 15-20 minutes. Dust with icing sugar prior to serving.
